So, I tried out this 'no knead' bread recipe that a lot of people have probaly read about already as it was in the NY Times ages ago. I only just found it though and it sounded easy enough to have a go at :)
Here is my (slightly altered) version:
3 cups flour (I used 500g of pasta dura)
1/4 tsp yeast
1 1/4 tsp salt (pretty sure I forgot the salt)
1 5/8 cups water (went with nearly 2 just to make it simple)
In a big bowl stir all ingrediants together until 'shaggy & sticky', cover bowl with plastic wrap and leave somewhere the dogs wont get it for 12-18 hours.
Dough is ready when surface is dotted with bubbles - this totally happened! yay!
Lightly flour work surface and place dough on it, sprinkle with a little more flour then fold once or twice - or if you are clumsy and messy like me, leave it in the bowl and do it then instead of loosely covering with plastic wrap to let it sit for 15 mins just re-cover the bowl and let it sit while you contemplate the meaning of life and eat a cupcake.
The recipe then says to gently and quickly shap into a ball and coat a cotton towel with flour, bran or oatmeal to cover it with and let it rise for another two hours... make sure you use a lot of flour, my dough was still pretty sticky (maybe cause I used slightly too much water but whatevs).
Half an hour before dough is ready heat oven to 230°C and put a heavy pot in the oven as it heats. When ready, slide dough into pot (you don't need to flour or oil the pot it magically doesn't stick!), cover lid and bake for 30mins, then remove the lid and bake for another 15-30mins depending on how crunchy you like the crust.
Take out and eat! Om nom nom.
